Now I need you Foodies out there to brace yourselves for what Im about to say:
I love Hidden Valley Ranch Dressing.
While I have switched entirely to homemade dressings for my salads, I still love ranch dressing as a dip for my crudités, and Hidden Valley is the only one that will do.
Until now. Its been in the back of my mind for some time now to figure out a homemade version of this staple because lets be honest- there is a lot of junk hidden away in the valley’s trunk, if you know what I mean. Soybean oil, other weird junk, and the fat content is inexcusable.
I was browsing through various recipes I found online and came up with my own variation based on the ingredients that interested me most. Here is what I came up with
Home Made Ranch Dressing
1 Cup yogurt (preferably Greek or Balkan style)1. Strain the yogurt through cheesecloth for 20 minutes or so. This may not be necessary if using a very thick yogurt, but it’s a good idea to strain the extra whey out if you can.
1 teaspoon onion paste (see below)
1 tablespoon diced fresh chives (dried could work, too)
1 garlic clove, minced to paste (see below)
1/2 teaspoon granulated garlic (optional)
1 teaspoon dried dill
1/4 tsp kosher salt
fresh ground black pepper to taste
1 tsp sugar or maple syrup
1 tsp apple cider vinegar
2. Meanwhile, dice the white of a scallion and mash into a pulp in your mortal and pestle (or simply use the back of your spoon in a small bowl- just mash it very well until its pasty). Repeat the same process with your garlic.
3. Place your onion and garlic pastes, the scallions, granulated garlic, salt, and dill in a small bowl. Add the strained yogurt and mix well. Add vinegar, mix again.
4. Take a taste. Add fresh black pepper and a little sugar or maple syrup to taste if needed to balance out the flavours.
This dressing was fabulous as a dressing on my Taco Cobb Salad I had today for lunch, and Bird loved it as a chip and veggie dip at snack time. Cover in an airtight container and Im guessing it should be good in the fridge for a few days at least (if it lasts that long).
One word of warning: this is NOT the dressing you want to eat right before date night with the hubs, an important job interview, or your Wed night prayer meeting. It is delicious and full of flavor, but it leaves you with some pretty wicked breath. Don’t say I didn’t warn you.
